The Big Prawn Company produces luxury
crayfish tails, prawns, and tiger prawns in brine


Established in 1995 by Sean O'Hanlon, The Big Prawn Company is the largest brining company in the UK. Based near the Norfolk coast, the company produces luxury peeled coldwater prawns, tiger prawns and is one of largest procurers of Chinese crayfish tails in Europe. The privately owned business employs 28 staff at its automated production facilities in Melton Constable. A privately owned business, The Big Prawn Company has the capacity to produce around 3000 tonnes of brined products per year, and distributes fresh produce three times a week, on a national basis, allowing maximum shelf life for customers. As such, all of the company's raw material suppliers are audited to British Retail Consortium (BRC) and ISO standards, resulting in the company being a holder of higher-level BRC standards for five years and boasting full accreditation from the British Sandwich Association. All of The Big Prawn Company's personnel, factory facilities and production processes have been examined under the strictest auditing processes, and successfully passed. Alongside this, the business works to maintain its excellent standards throughout its entire supply chain, from the boats fishing the raw materials, through to the customer delivery service, in order to give its customers the highest standards of service.

The organisation's automated production plant uses a modern, continuous temperature controlled, water flow system, which offers a consistently defrosted product from -18 to +1 degrees Celsius in just five minutes. This effective system helps to minimise cell break downof the product, and ensures a total production time, from frozen, through to brining and packing, of seven minutes .At the Convenience Retailing Show inMarch this year, The Big Prawn Company launched a brand new product aimed specifically at the 'food to go', snack sector. The new 'Breakers' range of seafood snacks, and accompanying dips, are a unique, first to market product aimed at the increasing popularity of healthy seafood snacks.

The 'Breakers' range initially consists of four products, tiger prawns with a sweet chilli dip, coldwater prawns with seafood sauce, crayfish tails with a chilli and lime mayonnaise, and mussels with a tomato basil sauce. All varieties of the new product are available in 120g twin compartment packaging with a spork. 'Breakers' offer a truly versatile, healthy snack, and can also be used as a sandwich filling, a salad topping and an accompaniment to pasta dishes.

In recent years the company has also significantly expanded its standard Convenience Retail Shellfish in brine range to include Norwegian rope-grown mussels, seafood cocktail - featuring cold water and tiger prawns, mussels, squid rings, and seafood bites (Surimi) in brine. Alongside this, the company created a new premium sub-brand, the Pink Chilean Gamba procured from a msustainable
source, a hand-peeled pink prawn as well as a unique seafood sauce. The Big Prawn Company offers an extensive range of brined prawns and crayfish, in a range of pack sizes, from 180g through to ten kilograms, for both the retail and wholesale markets. The business' crayfish, of the Procambarus Clarkii species, are wild caught and harvested in China, specifically for brining.

The product offers an exquisite fresh taste, combined with a succulent, juicy texture, and the crayfish tails are widely recognised as the UK's fastest growing, most popular seafood ingredient. Provided in 180g packs, the product has a shelf life of six weeks from production, and are produced to order, with regular deliveries nationwide. In addition to the launch of Breakers, the company is also responding to the increasing demand for MAP products and has produced a range consisting of coldwater prawns, tiger prawns, crayfish tails, seafood cocktail and Chilean Gambas. These are produced in 180g packs and are primarily aimed at the major multiples. The initial reaction has been very favourable and full production is expected in late spring.

Together with this, the organisation sells tiger prawns, of the Paneus Monodon species, regarded as the finest on the market.
