What Is Ribeye Steak?

Ribeye is considered one of the juiciest steaks available, and it comes well marbled with fat. While it can be chewier than a more refined cut like filet mignon, it definitely equals and even surpasses it in flavor.

It’s sectioned from the center of the rib area and can be sold boneless or bone-in.

When selecting your ribeye, choose one that has good marbling and a nice thick cap of fat across the top.

What Is New York Strip Steak?

Also referred to as “strip,” New York Strip has less fat than a ribeye; however, this is still a flavorful steak to enjoy. But, of course, you know how tasty that cut can be if you’ve had tenderloin.

New York Strip is just as tasty, if not more. It’s cut from the short loin, which is found towards the back of the cattle. You’ll rarely find a New York Strip sold with a bone inside.

You don’t want to marinate this steak. Instead, coat it in a salt, pepper, and spices dry rub. Cook this steak in a skillet for best results.

New York Strip vs. Ribeye Steak

So if both are equally great steaks, which do you pick and why? First, let’s compare the two a little further.

The primary difference that is easy to spot is the marbling. Ribeye will have considerably more marbling than a New York Strip, meaning there is a higher quantity of fat in a Ribeye. This also makes it a less forgiving cut of meat to cook, as if you overcook it slightly, it will still remain juicy due to the fat rendering.

When you look at a New York Strip, you will find a thicker band of fat that runs down one side of the steak. This is a tougher lining of fat, which doesn’t render down easily and remains very chewy. However, this fat line contributes heavily to the New York Strip’s flavor.

Finally, if you want a piece of meat that will melt in your mouth, the Ribeye is the one to pick. Reported to have an almost butter-like sensation in the mouth, this is the steak to buy if you want to impress.
